About this coffee
An anaerobic lot from farmers around the Kokosa station in Bensa, at about 2,100 m. Selected whole cherries are sealed in tanks with one-way valves for 24–96 hours while lactic bacteria and yeasts break down sugars and mucilage. Intensely sweet, juicy and complex: ripe banana, pineapple, mango and orange blossom. 100 g bags.
