About this coffee
Jamison Savage's Echo: ripe Gesha cherries from Finca Deborah are depulped and sealed in CO2-flushed tanks for his carbonic maceration, with some of the coffee's own dried cascara added back before fermentation, then washed. Intensely aromatic, with jasmine and rose, raspberry, white grape and blood orange, and a deeper plum and cascara fruit as it cools over a syrupy, perfumed finish.
