About this coffee

Felipe Trujillo left a CEO career to revive his family's farm, La Ventola, and borrowed from winemaking to master fermentation there. Dense cherries picked at a mix of ripe, overripe and half-ripe ferment aerobically for 72 hours, then anaerobically for a week after pulping, before 2-3 weeks of sun-drying. Methodical's most avant-garde rating (7/7): marmalade, brown sugar and berries.
