About this coffee
Small producers' cherries undergo a 12-hour aerobic farm fermentation, then depulping before moving to the Los Patios station where peach concentrate and a proprietary solution are added for two days to transfer aromatic compounds. After co-fermentation the coffee dries for 12–16 days under careful monitoring, balancing Geisha's floral complexity with sweet peach aromatics. Source: dropshot.coffee
