About this coffee
From Shyira, a washing station built in 2017 at 2,000 m, among the highest in Rwanda. Cherries are floated, pulped and fermented about 12 hours in concrete tanks, with the parchment agitated by ceremonial foot-stomping to the station's own song, then graded by density and dried around 30 days under alternating sun and fog. Light and juicy. SCA 84.75.
