About this coffee

A decaffeinated Colombia (Tumbaga, Excelso EP) that reads nothing like a decaf: intense chocolate and sweetness with apple and caramel. A full-bodied, sweet, low-acid base is chosen deliberately, because the sugarcane process — soaking the beans in water so naturally-occurring ethyl acetate from molasses binds and removes the caffeine — amplifies both traits.
