A Pink Bourbon lot from Elias and Shady Bayter's El Vergel Estate, using a carefully controlled modern process: a 48-hour sealed-bag pre-fermentation, depulping, then roughly five days of co-fermentation with yeast and banana compounds to build texture and sweetness.
