About this coffee

The 2026 harvest of El Paraíso's lychee lot from the Bermúdez family. Ozone-sanitised cherries ferment 72 hours anaerobically in water; after pulping, a culture made from their own pulp and mucilage is reintroduced for a 36-hour pressurised fermentation with Paraiso Yellow Fruit yeast, before a thermal-shock wash and mechanical drying. Layered and highly aromatic.
