A Rainforest Alliance-certified Castillo (84.5 points) from Finca Insula in Quindío, owned for 15 years by Juan David Hernández; plantain, avocado and native roble cafetero trees grow among the coffee on the 40-hectare farm. Highly aromatic, balanced and mild: a classic filter coffee or gentle espresso.
