About this coffee
For more than 26 years, Wilton has been growing coffee at Granja Paraíso 92 in Cauca, Colombia. His approach sits somewhere between farmer, scientist and relentless tinkerer - pairing meticulous growing practices with a microbiology lab, custom-built equipment and an incredible amount of control over fermentation. At around 1,900 MASL, Granja Paraíso 92 sits in the volcanic soils of Cauca. Wilton uses controlled bioreactors, specific microorganisms and close monitoring throughout processing to build coffees that are intensely expressive, but still precise and clean.
