About this coffee
Edwin Noreña's experimental fermentation program: cherries get a 24-hour low-oxygen treatment then 72-hour carbonic maceration; the resulting mosto is combined with hops and reintroduced to the depulped beans for further fermentation before greenhouse sun-drying. The result is bright and floral, with lemongrass, jasmine, mandarin and rose tea notes where hops add botanical depth. Source: dropshot.coffee
