About this coffee

A blend of Tabi and Yellow Colombia from two experimental Huila farms: Nestor Lasso's El Diviso (1,780-1,900 m) and the Vergara family's Las Flores (1,700-1,790 m). A two-stage fermentation, aerobic and then anaerobic under water, builds stone-fruit flavour before a hot-and-cold water shock locks it in.
