About this coffee
An anaerobic natural Castillo from the Anserma cooperative in western Caldas, founded in 1967 and now 2,083 growers strong. At the co-op's wet mill the cherries are colour-sorted, floated and sealed in closed tanks for 96 hours, then dried slowly in a mechanical silo for about 100 hours. Dark chocolate with pomegranate, sour cherry and pineapple.
