About this coffee

An experimental Castillo microlot from Jairo Arcila's Finca Santa Mónica in Armenia, Quindío, produced with Cofinet. Ripe cherries are floated at the La Pradera mill, then given 72 hours of dry anaerobic fermentation with the pulp on and fresh cherries added to the tanks, before honey processing and slow drying. Intensely sweet and vibrant: caramelized red fruits, red apple, lime and molasses. Scored 88.5 on Lot Zero's table; roasted omni.
